Gosh how fast is this year going?? I have been so busy with all the usual things and suddenly here it is March (almost half way) and I have three of my five children’s birthdays this month, the first one being tomorrow, so guess what I am doing now??? Baking…or should I say Steaming cup cakes for a birthday cake. Chocolate ones to be precise…(what else is there?)
This is exactly the right measurements for a perfect dozen.
Using 150 grams of both butter and caster sugar, 175 grams of SR flour, 2 tablespoons cocoa, 1 generous teaspoon of real vanilla essence and 3 eggs. Beat the eggs lightly with a fork, add to other ingredients and beat with an electric beater for about 2 minutes until light and fluffy. I am using Silicone Baking Cups 12 Countso they don’t need lining, just spray lightly with an oil. Divide batter between the moulds and steam for 25 minutes. They will be moist, more-ish and frankly, gone before you can ice them…but should you want to;
Beat together 150 grams unsalted butter, 250 grams of icing sugar and a dash of vanilla. If needed add a teaspoon of hot water. At this stage you can add color or divide the mixture and add several colors! Now remember, to be a great cup cake, you must have a cake to frosting ratio (c2f) of at least two to one!
