If you haven’t steamed chicken in your Thermomix, this summer is the time to start. You get the most amazing tender results and they are stunning for all sorts of salads. For best results, slice each chicken breast into 4 pieces and place into Varoma dish and tray. Place boiling water into Thermomix bowl and set Varoma into position. Cook for approximately 15 minutes or until chicken is cooked. SLice into smaller bite size pieces before combining with salad ingredients. OR shred the cooked chicken for a few seconds (really only about 4) with or without dressing, on Reverse + speed 4-5.
NEED:
4 steamed chicken breasts
1 recipe orange dressing (see below)
500grams red seedless grapes
2-3 stems celery cut on an angle
½ cup walnut pieces
2 teaspoon fresh tarragon or chervil if available.
Rocket
DO:
Slice or shred chicken breast and mix with dressing.
When ready to serve mix with other ingredients. Can add rocket
and avocado as desired to extend.
ORANGE DRESSING
Place the zest and juice of one orange, 4 tablespoons flavourless oil (grapeseed), 4 teaspoons rice wine vinegar, pinch each salt and sugar, dollop of sour cream and cranberry jelly to taste and several grinds of pepper into Thermomix bowl and blend together for 10 seconds on speed 8. Dressing will keep chilled for several days.
