CHOCOLATE MUD CAKE WITH CREAM CHEESE SWIRL

Now if this isn’t the easiest dessert cake you have ever made, I will need to know WHY!!

NEED:
Cake:
2 cups caster sugar
3 cups SR flour
½ cup good cocoa powder
pinch salt
1 teaspoon bicarb
2 cups cool water
3 tablespoons balsamic vinegar
½ cup vegetable oil
2 teaspoons vanilla

Swirl:
250 grams cream cheese
½ cup caster sugar
3 eggs
vanilla
¼ cup SR flour

DO:
Put all cake dry ingredients in big bowl and stir to combine.
Add wet ingredients and mix with fork until fully combined.
No need to sift flours.
Pour into greased and floured baking pan.
In food processor mix Swirl ingredients until smooth.
Place big spoonfuls of mix on top of cake mixture and then mix through with a fork making a swirl pattern.
Process in steam oven for 60 minutes (+) until set in centre.
Serve warm or cold with ice cream or cream.
