NEED:
2 cups caster sugar
3 cups SR flour
1 teaspoon bicarb
pinch salt
2 & 1/2 cups dessicated coconut
2 mashed bananas
1 teaspoon vanilla bean paste
2 tablespoons white wine vinegar
1/3 cup vegetable oil
1 cup cool water
DO:
Mix dry ingredients together without sifting.
Mix wet ingredients together and add to dry, stirring with a fork.
Add more coconut if batter is too runny.
Pour batter into ungreased baking pan. (This is a big cake)
Process in steam oven for 1 hour or until set in middle.
Cool and ice.
ICING:
Mix 250 grams cream cheese with 2 cups of icing sugar until blended.
add one small tin of passionfruit pulp until blended.
Ice cool cake and stop drooling!
