Berry Friands

For the uninitiated, these are a ‘posh’ muffin, and well worth every calorie! The oval shape helps the friand rise and a hot oven is essential. These are a must with fresh hot coffee for brunch…enjoy!

NEED:
1 ½ cups icing sugar
150 grams whole almonds ground in food processor
½ cup plain flour
5 egg whites, lightly beaten to foamy
1 teaspoon vanilla bean paste
125 grams unsalted butter melted
frozen or fresh berries of choice
icing sugar to dust

DO:
Pre heat Pyrolytic oven to 200 deg. C.
Lightly grease and flour 12 friand mould tin.
Place dry ingredients in large mixing bowl and stir.
Add egg whites and vanilla bean paste and butter, folding in until mixed.
Spoon mix into tin, add fruit (frozen berries, fresh strawberries etc) to top.
Bake in oven approx 20-25 minutes until edges are golden.
Remove from oven and rest in moulds 5 mins.
Dust with icing sugar before serving.
