SELF SAUCING CHOCOLATE PUDDINGS

NEED:
30g Butter
½ Cup caster sugar
½ tsp Vanilla
1 Egg
1 Cup Self raising Flour
2 tablespoons Cocoa Powder
½ tsp salt
½ cup milk
Sauce:
¼ cup Sugar
2 tablespoons Cocoa powder
¾ cup hot water

DO:
Cream butter with sugar and vanilla.
Add egg and beat until creamy.
Fold in sifted flour cocoa and salt alternately with the milk.
Pour into greased coffee cups –
do not fill up too much as they rise a lot –
To make sauce mix sugar and cocoa together and sprinkle liberally
over the top of each pudding then pour hot water over the top.
Process in steam oven for 20 to 25 minutes.

SERVE: With whipped cream and icecream.

    can this recipe be cooked in a double boiler on the stove top?

    Yes Marg, but probably better in the oven with a dish of water underneath it. Use a low temp, say 120 degrees. Good luck and let me know how you go!
