My parents are from south-west Texas and we've always eaten a lot of Mexican food. Until recently we couldn't find hominy here either, and only had it when Grandma sent us a box of goodies from 'home'. But a few weeks ago a new IGA supermarket opened up here in our small country town, and it has a wonderful international section... and I found hominy! I was so excited I had to buy some, even though it cost over $9 for an 822g tin! Now I have the perfect recipe to use it in - thank you! This sounds great – and I absolutely love hominy! We used to use hominy meal to make pig food when I worked up country as a student. It was a byproduct of something ? Maybe cornflake manufacture? Really a long time ago - but it was cheap.
