Frozen Fruity Torte

We are in the middle of a crisis the likes of which the world has never seen, and yet here is this beautiful thing, easy to make, perfectly health giving, full of immunity boosting ingredients...and so pretty. It is perfect for celebrating in the comfort of your own homes! Don't be afraid of the avocado layer, it is actually the nicest. Happy quarantine! #staycalmandkeepcooking I say!

BENEFITS:

Mango; Mango is low in calories yet high in nutrients — particularly vitamin C, which aids immunity, iron absorption and growth and repair.

Blueberries: Blueberries have the highest antioxidant capacity of all the popular fruits and vegetables. (Apart from chocolate...just saying!)

Avocado: Potassium is an important mineral that most people don't get enough of. Avocados are very high in potassium, which should support healthy blood pressure levels.

Line the base of a round spring form tin with baking paper. You could also use a straight sided loaf tin for this if you wished.

For each layer (choose any order you like) place all ingredients into Thermomix bowl and blend 20-30 sec/speed 8 until well blended. Times will vary slightly with each layer depending on density of frozen berries etc.

Pour each layer in and freeze for at least 2 hours before proceeding with the next layer.

4  

To serve, remove from tin and cut into slices.
