Grilled Sweet Potatoes

Grilled Sweet Potates? Well yes, bring them on...apparently lower carb than normal potates. But to be honest, either way, love ‘em, Make ‘em, eat ‘em and come and tell me about ‘em. (That would be on social media avenue of choice; Pinterest Instagram Facebook or the very new and exciting Inside Closed Facebook group...be there or be square.)

Preheat oven to 220°C.

Preheat a ridged grill pan on a very high temperature for about 10 minutes.

Cut the potatoes lengthwise in halves. Sprinkle each with the sugar and salt.

Drizzle oil on the grill pan, turn the heat down to high and place each potato cut side down on the pan to create grill marks, across the wider part of the potatoes.

Cook briefly just until you have a nice sear on the potato.

Wrap each piece in foil separately and place onto a tray. Bake for 20-25 minutes or until tender. Serve hot.

Serve with the very delicious Slow Roast Leg of Lamb or with any other roasted meat of choice.
