Lattice Cheesecake Slice

Do you remember these? I am pretty sure my mum used to make these without the homemade jam. The jam does add something though especially when it is Strawberry Vanilla Jam.

They are super delicious. I had to give them away for fear of eating them all in a matter of hours. They will keep in the fridge pretty well unless you cannot resist. So think about that! A cheesecake slice. So good. So vintage! Enjoy.

Line a straight edged baking tray with baking paper. Cover the bottom with 1/2 the lattice biscuits, top side down. Spreading them with jam as you go.

Bloom the gelatine in the water, stirring vigorously.

In the Thermomix bowl, combine bloomed gelatine with all remaining ingredients 1 min/speed 4. Scrape bowl and repeat.

Pour onto Lattice base.

Top with more Lattice biscuits, top side up. Spreading jam on the bottom of each biscuit as you go.

Try and line up the 'joins' of the biscuits for easy cutting and serving.

7  

Refrigerate for several hours until the cheesecake mixture has set.
