Tenina.com's Almond Cacao Crusted Salmon



  1. Preheat oven to 200°C. Line a baking tray with paper.

  2. Place peppercorns and coriander seeds into Thermomix bowl and mill 10 sec/speed 10.

  3. Place remaining ingredients except salmon into Thermomix bowl and blend 4 sec/speed 5.

  4. Par-bake salmon fillets in a hot oven for 5 minutes.

  5. Top with almond cacao crust mixture and return to the oven for a further 5 minutes.

  6. Serve with additional lime wedges on the side and a fresh herb salad.
