Apple Cakes With Caramel Sauce

I made this cake back in the day when I was at Thermomix head office as the Head of recipe development. I also took the picture with my then dodgy camera, and thought it looked amazing. I have to say it isn't all that bad. The cake is certainly a good recipe, you won't be disappointed!

Perhaps when I have a moment, there will be time for a new pic, but in the meantime, get your bake on!

Preheat oven to 160ºC. Butter an 8 hole mini loaf tin and set aside.

Place sugar into Thermomix bowl and mill 10 sec/speed 10.

Add butter and mix 1 min/speed 3. Scrape down sides of bowl.

Add eggs, flour, baking powder and milk and mix 10 sec/speed 6.

Scrape down sides of bowl and mix 5 sec/speed 5 if necessary.

Divide cake batter between holes and smooth surfaces with the back of a wet spoon.

Peel and quarter apples. Thinly slice each quarter and arrange on top of each cake.

Brush with warmed apricot jam and bake for 30-35 minutes or until risen and skewer comes out clean.

9  

Sauce; place all ingredients into Thermomix bowl and cook 7 min/Varoma/speed 3, with MC off.Blend 5 sec/speed 6.

Drizzle cake with Caramel brandy sauce and whipped cream. Serve Warm.
