Artichoke Dip

This one is super simple and so quick you can make when your guests have already arrived if necessary. I always have a jar or two of Artichoke hearts in my pantry. They add a lot of flavour to loads of recipes.

Artichokes are often considered to be a vegetable. They are actually a thistle. You must always remove the choke from the centre of the flower. They are beautiful when fresh used as flowers, (though never waste that heart!!)

The plant originated in the Mediterranean and has been used for centuries for its potential medicinal properties.

Its purported health benefits include lowering blood sugar levels and improving digestion, heart health, and liver health.

For me though? Pass the dip!

Need

  • 80 Grams Swiss cheese, cubed
  • 2 cloves garlic
  • 2 spring onions
  • 290 Grams jar marinated artichoke hearts, drained
  • Drizzle cream as needed
  • pink salt flakes and pepper to taste BUY
  • 250 Grams cream cheese

Do

1  

Place Swiss cheese into the Thermomix bowl and grate 10 sec/speed 10. Set aside.

2  

Place garlic and spring onion into the Thermomix bowl and chop 2 sec/speed 6.

3  

Add all remaining ingredients, including grated cheese and blend 10 sec/speed 4. Scrape down sides of bowl and blend 10 sec/speed 4.

4  

Serve with crackers and raw vegetables.
