Well this is SO good, and we have several iterations of this recipe on here that we have done for various reasons with varying flavours. I am a little addicted to it. (Or is it addicted to me?) I don't feel guilty at all eating more than one piece, though you shouldn't eat too much of anything we are told. If balance is a piece of fudge in each hand, I have you covered. Try it and see how you feel!

BENEFITS:

Maca powder is known to help balance hormones, alleviate depression, benefit your bones, increase energy and libido and is an all round great addition to your morning smoothie. However, don't go wild with it. Too much is not good for you.

Peppermint oil is calming, refreshing and is known to promote healthy respiratory systems.

Roast cashews in a 160°C oven for 20 minutes. Add coconut to the tray and cook a further 5 minutes. Remove from the oven and cool slightly.

Place all ingredients into the Thermomix bowl and blend 3-4 minutes/40°C/speed 6 stopping to scrape down sides of bowl as needed. Mixture should become liquefied.

Pour into small paper lined loaf tin and sprinkle with additional salt flakes.

Freeze or refrigerate. Cut into squares and serve. It is best kept in the fridge as it does melt at room temperature unless it is quite cold!

We suggest either maca powder for a caramel fudge or peppermint oil for an out of this world peppermint fudge. Both of them are quite delicious.
