This sneaky little number is the perfect way to have delicious, thick and chunky jam without all the sugar that is usually in jam. Sugar is the key ingredient used to thicken most jams; instead I have used chia seed, which will absorb basically as much liquid as you can throw at it, then turn into a jelly-like substance, thus thickening your jam. So enjoy a serving of this with less guilt on the side. You can add more honey (or syrup) if you are feeling deprived, but the mango is very sweet and should give the jam the sweetness of sugar.

- 200 Grams mixed berries of choice, frozen
- 100 Grams mango, frozen, cut in pieces
- 100 Grams raspberries, frozen
- 3 Tablespoons honey, or rice bran syrup
- 2 Teaspoons Vanilla Bean Paste BUY
- 1 Fresh Lemon Juice
- 40 Grams chia seeds
Place all ingredients into except the chia into the Thermomix bowl and blend 5 sec/speed 8.
Scrape down sides of bowl, cook 10 min/Varoma/speed 1. Add the chia seeds and stir 5 sec/speed 5.
Pour into sterilised jar,and allow to thicken as it cools.
Use as you would any other jam! You can of course use any other fruit of your choosing for the same method.
