Cinnamon Dusted Coconut Truffles

Whilst not strictly ‘truffles’ in that no chocolate is involved whatsoever, these little bites of creamy gooeyness are well called truffles. Dusted in plenty of cinnamon, (do not inhale whilst milling!) they are quite different and delicious, working well for the non chocolate sweet eater. (Are there any of those out there? Seriously?) Love love love these. Great for gifting, or just plain guilt free munching.

Place coconut and sugar into Thermomix bowl and mill 1 min/speed 8. Stop and scrape down sides of bowl as needed.

Add vanilla, coconut oil and milk and blend 1 min/speed 8. Stop and scrape down sides of bowl as needed.

Pour mixture into a plastic container and refrigerate until set solid. Meanwhile place cinnamon and cocoa into clean, dry Thermomix bowl and mill 20 sec/speed 8. Remove from bowl and place into small open container.

4  

Remove coconut truffle mixture from container and cut into even cubes. Roll with hands into balls and shake in cinnamon mixture. Keep refrigerated.
