Cointreau Orange Curd

Makes a large jar Prep Time 5 minutes   Cook Time 12 minutes   Rated:

This is lemon curd with a twist...an alcoholic twist in fact and of course not lemon at all. It would also be fantastic with a few drops of wild orange oil added at the end for that real orange flavour game changer! I suggest this is perfect on crepes. Lots of crepes. Cue the Paris cafe. Bon mon amie.

Need

  • 220 Grams golden caster sugar
  • Zest of 2 oranges, finely grated
  • 240 Grams Butter cubed BUY
  • 100 Grams orange juice, freshly squeezed
  • 100 Grams fresh lemon juice
  • 50 Grams Cointreau
  • 4 eggs + 2 yolks

Do

Place sugar and zest into Thermomix bowl and mill 10 sec/speed 10.

Add butter and chop 5 sec/speed 7.

Add remaining ingredients. Cook 10 min/80°C/speed 5 and then 2 min/90°C/speed 5.

Remove from the Thermomix bowl immediately or the curd will split from the residual heat.

Pour into sterilised jars and seal.
