Cold Chilli Noodles

If you have kids that are hungry ALL. THE. TIME. This recipe is for you! It is so quick to whip up and really just revolves around what you have in the fridge. As long as you have some noodles, and eggs, you are good to go within minutes. Add stir fried protein, chilli jam, all the veggies you have in your fridge, dust it all with toasted seeds (even crushed peanuts would work) and spicy ground chilli, cayenne, paprika etc and you will not believe how good these are.

This is a lot healthier than Mee Goreng, and so much nicer. It could join the fake-away list for those of you who prefer fresh healthy fast food! Enjoy!

Need

  • 400 Grams noodles of choice
  • Sauce
  • 2 shallots
  • 2 cloves garlic
  • 2 Teaspoons smoked paprika
  • 1 Teaspoon cayenne pepper
  • 2 dried chillies, soaked in boiling water
  • 55 Grams miso (dark)
  • 2 Tablespoons rice wine vinegar
  • 1 Teaspoon shrimp paste
  • 2 Tablespoons tamari or soy sauce
  • 2 Tablespoons honey
  • 2 Tablespoons dark brown sugar
  • 2 Tablespoons sesame oil
  • pink salt flakes to taste BUY
  • Garnishes
  • lettuce
  • 2 Tablespoons sesame seeds, toasted
  • red or green cabbage, shredded
  • carrots, julienned
  • cucumber, sliced
  • sprouts of choice
  • spring onions/ shallots
  • Kimchi (optional) Recipe
  • sesame leaves, shredded (Perilla leaves, optional)
  • 2 - 6 Air Fryer Boiled Eggs Recipe
  • fresh herbs of choice, we love Vietnamese mint and coriander, which are both non traditional, but so good.

Do

Prepare noodles according to package directions.

Alternatively, you could make your own fresh rice noodles for this dish, though it will not be quite the same.

Plunge cooked noodles into cold water. Keep in insulated serving bowl in cold water until ready to assemble.

Prepare sauce by placing all ingredients into Thermomix bowl and blending 6 sec/speed 6. Scrape down sides of bowl and saute 5 min/Varoma/speed 1.

Meanwhile prep all the garnishes, boiling, toasting, shredding or julienned as needed.

Stir sauce through noodles and top with all prepped garnishes before serving.
