Condensed Milk Dulce de Leche

Caramel is made from slowly cooking down granulated sugar, simply by itself or with a splash of water. Dulce de leche is made from slowly cooking cows milk and sugar together. Dulce de leche made with goat milk is known as cajeta.

You will have seen the commercial version of this on shelves. Top N Fill is basically dulce de leche or caramelised sweetened milk. It is delicious for loads of recipes and I have only just begun to explore the possibilities on here now. I did this recipe quite a few years ago for something else and it still holds up.

The benefits of doing this while the milk is still in the tin is that you waste nothing in the bowl or around the blades. Of course it will also maintain the quantity pretty evenly, there is no danger of it boiling over as is the case when cooking it directly in the Thermomix bowl.

It will keep sealed in the tin after you have made it for potentially longer than the original use by date (which will have disappeared as the label will come off during cooking so make a note.)

  • 1 x 395g tin condensed milk, unopened
  • 2 Litres water for steaming



Place condensed milk still in the tin into simmering basket and insert into the Thermomix bowl. Fill with water to the top of the 2L mark, which should be approx. at the rim of the tin. Cook 75 min/100°C/speed 3. Cool tin completely without opening.


To use, open when cold, or keep in the fridge until ready to use. We love this over ice cream, waffles, pancakes or as an ingredient in a recipe that uses the commercial version Top N Fill.
