Check that the dates are pitted. Even if the package says so. You need 200g after pitting.
Cover dates in 100g of the boiling water and if the dates are dried, I suggest you leave them for as long as you can and until all the water has been absorbed. Otherwise, 30 minutes is enough time.
Add soaked dates and any liquid, and all other ingredients other than remaining water to the Thermomix bowl and cook 5 min/80°C/speed 4. Scrape down lid and sides of bowl.
Blend 1 min/speed 7 as you add the remaining boiling water through the hole in the lid, much like adding oil into mayonnaise. Leave the MC in place and just add the water onto the lid.
Stop and scrape down if you wish. If you used dried dates, you may need more boiling water but don't go crazy.
Scrape into a jar and keep until use.
Extra recipe: When the Thermomix bowl has been emptied of the caramel, add a cup of milk (and potentially some ice) and blend 1 min/speed 10. The most delicious caramel milkshake!
