The old Lemonade Scone trick, turned on its ear … just a little. With or without a Thermomix, make your life easy by whipping up a batch of these. Bake on top of a soup for a lovely crust, steam above the Beefy Stew for dumplings, or roll and wrap after filling with all sorts of wonderfulness … the sky is the limit.

Keeping It Simple:

For a sweeter scone, use plain lemonade in place of the soda water and add 1 tsp vanilla bean paste.

For a savoury scone, add herbs, pepper, chilli, mustard powder, grated cheese, cooked bacon, or other seasonings of choice. s

Need

  • 350 Grams bakers flour
  • 1 Teaspoon baking soda
  • 1 Teaspoon baking powder
  • 150 Grams cream
  • 150 Grams soda water
  • Generous pinch pink salt flakes BUY

Do

1  

Preheat oven to 220°C and line a tray with baking paper.Set aside.

Place all ingredients into Thermomix bowl and mix 12 sec/Interval.

Tip out onto floured Silpat mat and gently roll out to 5 cm thick. Cut scones and place onto prepared tray.

4  

Brush with a little milk or egg wash and bake 10–15 minutes until well risen and golden.

Serve with jam and cream, or use in other recipes throughout this book as suggested.
