To make the Farfelle, roll out pasta dough on the thickest setting. Fold in half and roll out again. Do this 4 times to laminate the dough.

Roll through up to setting 5. One setting at a time. (on a kitchen aid roller). Or until you can see your hand through the dough. Lay pasta dough on a semolina covered bench.

Cut into long strips. Then into squares with a roller cutter. Pinch squares of pasta in the middle to make a bow.

Make sure you are ready with the boiling water and the hot sauce all at the same time. It is super quick!

To make the sauce fry pancetta until golden. Add garlic and stir for 1 minute. Add cream. Stir to combine.

Boil Farfelle in rapidly boiling salted water for 4 mins. Lift out with a slotted spoon and place into the hot sauce.

Quickly mix through 1 egg yolk into the warm sauce. Add parsley and stir through.

You could use any short pasta shape for this recipe, but it is so pretty with the farfelle!
