Oven Fries and Lime Aioli. Fast (Fake Away) Food At Home!

Ever thought that local pizza, (chicken, hamburger, fish and chips) lacked flavor/substance/nutrition? Well you were right on all three counts! So bookmark these tips and stop calling the pizza shop when you get home at night tired and out of ideas...and not only eat cheaper, eat better nutritionally as well. Just got home from a five hour drive from down south of the State (Albany for the un-Australian) and having eaten rather well down there at the Festival of the Sea (Fresh sardines, oysters, yabby pies, local cheeses, seafood cooking demos etc.) unable to face a bowl of cold cereal, I quickly whipped up a batch of Lime Aioli and then cooked some homemade oven fries with Parmesan...we were eating within 40 minutes and during that time I was mostly just snoozing on the couch, simply waiting for the fries to be done...so; no excuses not to Fake Away really. Is there?

Lime Aioli;

Place peeled garlic into Thermomix bowl and chop for 4 sec/speed 6.

Add vinegar, mustard and egg yolks to Thermomix bowl and emulsify 1 min/37°C/speed

When there is 3 minutes left on timer, hold MC in place with your hand, (to prevent it floating) while you pour the oil onto the lid.

Remove the lid, scrape around the blades and add egg whites, salt and lime juice. Whip briefly just to combine before scraping down sides of bowl and blending for a few more seconds.

Store in the fridge to use with anything you fancy!

Home Made Oven Fries;

Preheat oven to fan forced 190ºC. Line 2 large baking trays with paper.

Cut fries equally and dry in clean tea towel.

Place Parmesan and paprika into Thermomix bowl and mill for 10 sec/speed 10 or until very fine. (This will depend on the age of your Parmesan.)

Using only half the potatoes at a time, dredge with flour, salt and Parmesan mix. Repeat with other half.

Divide between 2 trays, drizzle with oil and bake in hot oven until browned and crispy.
