Do

  1. Place all spices (not the salt) into saucepan and dry toast on high heat until just smoking. Cool slightly.

  2. Place into the Thermomix bowl and mill 10 sec/speed 8.

  3. Add salt flakes and blend 6 sec/speed 6 for a coarse blend or 10 sec/speed 10 for a fine blend.

  4. Rub into pork skin, chicken or fish fillets before cooking.

  5. Store in an airtight container. Will keep indefinitely.
