Guinness Cake

To be sure, to be sure, to be sure! May the luck of the Irish be with you in not eating this entire cake in a single sitting. I was reminded of Bruce Bogtrotter and his chocolate cake scene from Matilda when this came out of the oven. Maybe it's not quite that big, but it is big. Then add the frosting and whoa!

Supposedly the look of this cake is to remind you of a glass of Guinness; frothy and white and airy on top and dark and brooding beneath!

I do love a good chocolate cake, this was moist, the ratio of frosting to cake was to my liking and although I literally ate one sliver before sending it off to work with my husband (oh my aching hips) I would definitely make it again for a big family occasion. I hope it becomes your great big Irish family favourite!

(We don't say you have to make your own creme fraiche for this recipe, we didn't make it ourselves either, but it is kind of cool that you potentially could!)

Preheat oven to 160°C. Grease and line the base and sides of a 20cm spring form cake pan.

Place butter into the Thermomix bowl, chop 10 sec/speed 5. Add Guinness and cook 2 min/100°C/speed 2.

Add cocoa and cook 3 min/100°C/speed 3. Set aside to cool slightly.

Into the empty bowl, place eggs, creme fraiche, vanilla, baking powder, sugar and salt. Combine 1 min/speed 5. Add the Guinness mix and combine 5 sec/speed 5.

Add flour 20 sec/Interval/dough setting. Finish combining with spatula. Pour into prepared tin and bake for 1 hour or until cooked through. Leave in tin for 10 minutes, then tip out onto a wire cooling rack. Cool completely before frosting.

To make frosting, place all ingredients into the Thermomix bowl and combine 20 sec/speed 5. Scrape bowl and repeat.

Spread frosting on the cake and enjoy!
