A light variation on a custard theme. Delicately flavoured and just a fantastic quick dessert for a summer or winter menu! (That’s if you can get the strawbs!) Enjoy.

- 450 Grams milk
- 100 Grams cream
- 2 Teaspoons Vanilla Bean Paste BUY
- 1 orange zest, finely grated
- 1/2 Teaspoon ground cardamom
- 60 Grams Honey
- 4 large egg yolks
- 30 Grams Cornflour or Cornstarch
- 1 Punnet strawberries, sliced
- 1-2 oranges, peel and white pith removed
- 1 Tablespoon Honey
- Pinch ground cardamom
Place all custard ingredients into Thermomix bowl and cook 8 min/80℃/speed 4.
Cook 2 min/90℃/speed 4.
Pour into dessert glasses immediately. Cover custards and refrigerate until well chilled, about 4 hours.(Can be made 1 day ahead.)
Compote; Place sliced strawberries in medium bowl.
Using small sharp knife, hold oranges over same bowl andcut to release segments, allowing juice and segments to fall into bowl.
Stir through 1 tablespoon honey and ground cardamom.
Place custards onto plates.
Serve topped with compote and whipped cream or mascarpone if necessary.
