Gotta admit I love a freshly made glass of homemade lemonade...and this is just another great way to use up whey...(I think you’ve heard enough of my no whey jokes, but oops, there I did it again. I like to think I’m funny!)
So if you are making yoghurt or fresh cheese, you will end up with a lot of whey. What to do with it? I did make a little video which is over on YouTube with a few suggestions. This recipe will get you using up all your whey...you’ll find yourself making ricotta cheese, just to get more whey. (I can’t resist.) Yes whey.

- 170 Grams water or coconut water
- 100 Grams coconut sugar
- 200-400 Grams fresh citrus juice of choice
- 1 Litre whey
- flavourings of choice as listed
Place water or coconut water and sugar into Thermomix bowl and cook 5 min/80°C/speed 2.
Add citrus juice and whey and stir 10 sec/speed 3.
Pour into sterilized jars with a tight fitting lids.
Add flavourings of choice and leave on your kitchen bench at room temperature for up to 2 days or until bubbles start to form when you move the jar.Refrigerate and strain before drinking.
Lime slices and frozen raspberries
Cucumber slices and a sprig of rosemary
Sliced pear, cinnamon stick, add a dash of maple syrup to serve
Blueberries and lemon slices
Strawberries and split vanilla bean
