Lemon and Dill Salmon Patties

Some things are just classics and I guess it is because they stand the test of time. If you haven't had a salmon pattie before, where have you been?? These little bites would work very well on a snacking platter, they are economical and really pretty tasty and quick to make.

We did toss up using fresh salmon but I couldn't bring myself to blitz up fresh salmon, so tinned it is. Very few ingredients required and you could replace the panko crumbs with dried bread crumbs if you were in a tight spot. These are very pantry oriented. Hopefully you have dill and lemon a plenty!

Aioli would also be a fantastic accompaniment, but we did love the little quick relish on the side and it is enough. Happy 1970's snacking kids!

Preheat oven to 180°C. Line 2 oven trays with baking paper.


The Patties;


Place onion into the Thermomix bowl. Chop 5 sec/speed 5. Add panko and combine 3 sec/speed 3. Let it rest for 10 minutes. The panko will soak up the onion juices and give flavour and texture to the patties.


Add all remaining ingredients except EVOO and combine 10 sec/Reverse/speed 2.


Roll into patty shape and coat with panko. Place on prepared trays and drizzle with EVOO. Bake for 30 minutes.


The Pickle;


Combine all ingredients in a small bowl.


Serve patties with pickle and garnish with dill.
