Lime and White Chocolate Bavarois
I do love a lime anything. Add cream, and heck, white chocolate and I am yours. All yours. So this dessert is a little bit decadent. It was one of my original recipes back in the day for Thermomix in Australia, but has been freshened up and had doTERRA lime oil added to it. I have been adding the culinary oils to a few things, you will start to notice, largely due to the amazing flavour punch they offer. Don’t be afraid of the avocado in this one, it is merely for mouth feel, texture and colour. I promise you’ll never know it’s there!

Need
- 1 Tablespoon powdered gelatine dissolved in 1/4 cup cool water
- 100 Grams golden caster sugar
- Zest 2 limes, finely grated
- 150 Grams chocolate white, chopped BUY
- Juice 4 limes
- 3 egg yolks
- 350 Grams milk
- 25 Grams cornflour
- 1 ripe avocado
- 300 Grams whipping cream
- 4-5 Drops doTERRA Oils pure lime oil (optional) BUY

Prepare gelatine and set aside.

Place sugar, zest and chocolate into Thermomix bowl and mill 10 sec/speed 10.

Add lime juice, yolks, milk and cornflour and mix 5 sec/speed 6.

Cook 7 min/90ºC/Butterfly/speed 4. Remove Butterfly.

Allow to cool slightly. Place gelatin water mixture and peeled and pitted avocado into Thermomix bowl and mix 10 sec/speed 6. Scrape down and repeat. Remove from Thermomix bowl and place into the fridge until almost completely cold.

Return cool mixture to the Thermomix bowl and add cream and lime oil if using. Whip 20-40 sec/Butterfly/speed 4.

Pour into serving glasses or dishes. Refrigerate overnight or for several hours before serving with additional whipped cream.
