Low Carb High Fat (LCHF) Nutella Donuts

When I tell people that I follow the LCHF (low carb, high fat) way of eating, they usually ask me about how I deal with cravings for all the foods I’m not allowed to have. To be honest, I don’t really feel that I have cravings for anything, except for rice! I love rice but at least that is gluten free so I do have it as a treat every now and then. I love trying out different recipes to “substitute” healthier ingredients to make those foods that others think I’m missing out on. I once had a get-together afternoon tea at my house made with all low carb ingredients… cupcakes, brownies, chocolates, cake pops, etc. and none of my guests knew what I was feeding them… healthy treats! I guess I just let the cat out of the bag!

Please enjoy my LCHF donut recipe for the thermomix. Not only were these delicious straight out of the oven, they were amazing after being left overnight in the fridge. The cream cheese nutella tasted like ice cream after being in the fridge. The recipe will give you more nutella than needed for the 12 donuts. It would taste delicious on banana bread. I think the donuts can actually be made into breakfast bagels if you omit the sweetener. I can see them being served with smoked salmon and cream cheese.

Need

  • Donuts
  • 150 Grams almonds BUY
  • 50 Grams coconut oil or butter
  • 3 eggs
  • 1/2 Teaspoon cinnamon
  • 1/2 Teaspoon baking powder
  • Pinches salt
  • 2 Tablespoons maple syrup or honey (to taste)
  • Nutella Cream Cheese Spread
  • 100 Grams hazelnuts (roasted optional)
  • 20 Grams coconut oil
  • 1 - 1.5 Tablespoon maple syrup or honey (to taste)
  • Pinches salt
  • 15 Grams cacao powder BUY
  • 40 Grams cream cheese

To make Donuts: Preheat oven to 160°C. Grease a 12 donut baking tray.

Add almonds to Thermomix bowl and mill 15 sec/speed 7. Set almond meal aside.

Melt coconut oil or butter in Thermomix bowl 2-3 min/50°C/speed 1.

Add eggs, cinnamon, baking powder, salt, maple syrup (if you want a sweetener) and almond meal. Mix 5-6 min/speed 5 until almond meal is well mixed through, scraping down the sides of the Thermomix bowl now and then.

Pour mixture into pre-greased baking tray, and bake for approximately 15 mins. While baking, prepare the nutella cream cheese spread.

To make Nutella Cream Cheese Spread: Place hazelnuts into Thermomix bowl and mill 15 sec/speed 7. Remove from bowl and set aside.

Melt coconut oil in Thermomix bowl 2 min/50°C/speed 1.

Add honey or maple syrup, pinch of salt, cacao powder, cream cheese (omit if Paleo) and milled hazelnut. Mix 3-4min/speed 5 until smooth and spreadable, stopping to scrape down the sides of the Thermomix bowl every now and then.

Taste and adjust sweetness to taste. Use immediately on the cooled donuts and store any leftover in the fridge.
