Lunchbox Meatballs

There seems to be an age old battle with parents and kids about eating lunches? Am I alone in this thought? My experience with five of the little darlings was varied. Different kids liked different things, some of them would eat everything, some would eat nothing. Frustrating! In the meantime, encourage them in prepping lunches by having a practice run with these meatballs. They are delish, the little hands can do all the rolling for you, the bigger hands can even cook them for you. And because they have invested some time in the whole process, they may be more than keen to eat these when lunch time rolls around. They are great energy protein balls essentially. You heard it here first! Protein powder in rolled up thingy's has nothing on these!

Place parsley into the Thermomix bowl and chop 3 sec/speed 5.

Place all remaining ingredients except EVOO into the Thermomix bowl and blend 8 sec/speed 7.

With wet hands, shape into approximately 40-50 meatballs or less if you are going with larger meatballs.

Heat a frying pan to a medium high heat and drizzle with enough EVOO to coat the pan. Fry meatballs in batches, turning until well browned and fragrant. Serve or cool and freeze in portion size packs for easy lunchbox delivery! They will be perfectly thawed by lunchtime if taken to school/work frozen as well as serve as a cool pack for the rest of the lunch!

If you prefer you can bake the meatballs in a 180°C oven for around 12-15 minutes.
