Minty Mojitos

It's official. Mint is my herb of choice. Not necessarily due to flavour, more because I have literally tons of it as it persists on popping up all over my garden unbidden. I have to say, I don't mind and I do use it a lot. You may or may not have noticed. At the moment my herb garden has self sown flat leaf parsley, sweet basil and a Thai basil that I cannot get rid of, even if I tried. Alas my Vietnamese mint died, but we will try again next summer. It has been spectacular.

So yes, drink it we will. Eat it we will. Check out some of my other minty recipes below. But not before sipping on your own mojito, made very simply without a sugar syrup to mess around with first. We love those recipes don't we?

Need

  • 150 Grams white caster sugar (this will help with the pretty colour)
  • 2 Handfuls fresh mint plus more for garnish
  • 6-8 limes cut into quarters, including the skin
  • 2-3 Litres soda water or as needed
  • plenty of ice cubes as needed
  • white rum to taste

Do

Place sugar and mint into Thermomix bowl and blend 10 sec/speed 10.

Add limes and about 500g water as well as some ice. Chop 3 sec/speed 6. Mix 10 sec/Reverse/speed 2.

Strain this mixture into serving jug with ice and more soda water. Stir through the white rum to taste and serve.

You can remix the residual sugar and lime mix by adding another 500g water and repeating the whole process. It will not be as strong, but will yield at least another round!

Serve over ice and dilute to taste with any additional club soda and rum as you wish! Garnish with fresh mint leaves.
