Natural Citrus Fizz

This mixture makes the perfect base for any beverage -- cocktail or mocktail. Use your imagination to create a signature drink!

Try adding any of the following combos:

Lime slices and frozen raspberries

Cucumber slices and a sprig of rosemary

Sliced pear, cinnamon stick, add a dash of maple syrup to serve

Blueberries and lemon slices

Strawberries and split vanilla bean

Of course knock yourself out with the alcohol options (not literally, please drink responsibly!!) This is summer in a glass.

Need

  • 170 Grams water or coconut water
  • 100 Grams sugar of choice (golden caster, coconut palm, panela, rapadura etc)
  • 100 Grams whey (from yoghurt or butter making)
  • 100-150 Grams freshly squeezed lemon juice
  • ½ Teaspoons dried yeast
  • Other fruits and flavourings of choice

Do

Place the water or coconut water and sugar into Thermomix bowl and cook 5 min/80°C/speed 2. Cool.

Add the whey, lemon juice and yeast and stir 7 sec/speed 3.

Place the mixture into a large glass jar with your flavours of choice. Leave on the bench at room temperature for at least 2 days.

When the drink is ready, if you shake the jar it should fizz a little.

Place into the fridge and drink over ice garnished with citrus slices and fresh fruit of choice.

Dilute to taste with gin, tonic water, sparkling mineral water, or for a sweeter drink, clear lemonade.

7  

If you plan on making something other than straight citrus, add whatever takes your fancy in step 2.
