Pecan Buckwheat Pancakes
Make on DropFather's Day breakfast needs to be a thing in all households. This is perfect for just that! These delicious pancakes are also good for him...a little bit decadent if you do it right, (more berries, more cacao nibs, more coconut cream) but super good for gut health. And did you know pecans help stifle the munchies hormone, satisfy your appetite and aid with weight loss...pass the pecans please!
And don't even start me on the health benefits of cacao...magnesium, iron, fibre, mood enhancement...the list of reasons for eating this pure chocolate are endless. I prefer them roasted, so I put them on a paper lined tray into a cold oven set to 160°C for an hour. They are sooo good, and your house will also smell amazing!

Need
- 120 Grams gluten free oats
- 120 Grams buckwheat
- 4 Drops Cinnamon Bark Oil OR 1 tsp ground cinnamon BUY
- 1 Teaspoon baking powder
- 1 Pinch Pink Salt Flakes BUY
- 1 banana, (approx 100g)
- 1 egg
- 2 Teaspoons Vanilla Bean Paste BUY
- 30 Grams Pure Maple Syrup
- 250 Grams Coconut Milk
- 40 Grams pecans, shelled, plus some more to garnish
- Extra Virgin Olive Oil (EVOO) for frying BUY

To Serve
- Berries of choice
- Coconut Cream Recipe
- roasted cacao nibs
- shredded coconut
- Pure Maple Syrup

Place oats, buckwheat, cinnamon, baking powder and salt into the Thermomix bowl and mill 10 sec/speed 10.

Add remaining pancake ingredients except pecans and blend 20 sec/speed 6. Stir through the pecans by hand. Allow mixture to sit in the Thermomix bowl for ten minutes while you prepare toppings.

Preheat a flat frying pan to a medium heat for at least 5 minutes.

Brush with a little oil and fry pancakes one at a time, turning very carefully. They are quite delicate until flipped, so be careful. Add more oil as needed and cook them all.

Serve stacked with all the fillings, to keep them dairy free use the coconut cream, but you could also use sour cream, or Greek yoghurt to dress them as well.
