I am not sure if you totally keep up with me or not...but I am frantic. I have so much on the go, which is just how I like it TBH. (Go look that one up HERE)

I am off to Europe, first to London for some cooking classes, with a menu from my lovely cookbook Cooking with Tenina. Then Guernsey, which is the new home of my eldest son and his little family. Then Paris (as you do, and Milan, as you do, and Lugano, as you do and then various other Italian locations, until departing from Rome, as you do!!)

But I digress...

This recipe is also on Foodiful, (now New Idea Food) a fantastic foodie site that has a LOT of my Thermomix recipes on it, in fact, I am happy to say that I am the Thermomix contributor of choice; Please go and sign up as you will start to see a loads of content filter through on there that is new and interesting, from me over the next few months.

Need

  • 150 Grams raw caster sugar BUY
  • 2-3 large lemons, cut in eighths
  • 150 Grams frozen raspberries
  • 2 Litres water, flat or sparkling
  • Ice to serve

Do

1  

Place sugar, lemons and raspberries into Thermomix bowl and chop 3 sec/speed 5.

2  

Add 1 litre water and stir gently 10 sec/Reverse/speed 2. Strain mixture well, reserving solids.

Return solids to Thermomix bowl and add another litre of water. Stir 10 sec/Reverse/speed 2. Strain and add to first amount of liquid.

Dilute further to taste and serve over ice.

More

You can use sparkling mineral water for some of the water amount, but not all of it, as it will fizz up and spill over the rim of the Thermomix bowl.
