Poached Bravo Apples

If we could have sourced mini apples this would have been just super cute. But as much as we tried, I had no idea where to begin with finding such a thing and as we were working with Manjimup producers, we went with the amazing Bravo apples and just picked out the smallest ones we could find. It ends up being about how many you can fit into the Thermomix bowl and surprisingly, we managed to get up to around 7 or 8, so just go with as many as you can based on the size apples you can get.

The big trick is not entirely coring the apple, so go up from the base of the apples, as far as possible without actually removing the very top piece that holds the stalk. I hope that makes sense, post me some pics, I would love to see your results!

Need

  • 1 Teaspoon cardamon seeds
  • 1 vanilla bean broken into quarters BUY
  • 1 Handful cherries fresh
  • 400 Grams raw caster sugar BUY
  • 400 Grams sweet white wine
  • 400 Grams water
  • 4-6 small apples, peeled and cored part way. Leave the stalk in tact, which helps keep the apples shape.

Do

Place cardamon seeds, vanilla bean and cherries into the Thermomix bowl. Lock in the blade cover. Pour in sugar, wine and water. Cook 8 min/Varoma/Blade cover/speed 1.

Add apples to the bowl and continue cooking 15 min/Varoma/Blade Cover/speed 1.

Remove apples with tongs carefully. Serve with vanilla ice-cream.
