Pork and Eggplant Curry

Need

  • Paste
  • 4 cloves garlic
  • 100 Grams red onion
  • 50 Grams lemongrass, cut into 1cm pieces
  • Zest of 1 lime
  • 20 Grams coriander root
  • 1/2 Teaspoon shrimp paste
  • 1 kaffir lime leaf
  • 1 Teaspoon paprika
  • 1/2 Teaspoon turmeric
  • 1/2 Teaspoon cumin
  • 1/2 Teaspoon dried chilli flakes
  • 20 Grams olive oil
  • 100 Grams water
  • Curry
  • 500 Grams pork loin, cut into 3cm pieces
  • 300 Grams eggplant, cut into 2cm pieces
  • 200 Grams coconut milk
  • 30 Grams fish sauce
  • 30 Grams honey or coconut sugar

Do

Place all paste ingredients into Thermomix bowl and blend 30 sec/speed 7.

Scrape around the sides of the bowl and repeat.

Scrape around the sides of the bowl then cook 5 min/100°C/speed 1.5.

Add pork to Thermomix bowl with the paste and cook 3 min/100°C/Reverse/speed soft.

5  

Add eggplant and coconut milk. Cook 50 min/90°C/Reverse/speed soft.

6  

Add fish sauce and coconut sugar then cook for another 10 min/90°C/Reverse/speed soft.

More

Squeeze over some lime juice and serve with cauliflower rice or side dish of your choice.
