Tenina.com's Pork and Eggplant Curry



  1. Place all paste ingredients into TM bowl and blend 30 sec/speed 7.

  2. Scrape around the sides of the bowl and repeat.

  3. Scrape around the sides of the bowl then cook 5 min/100°C/speed 1.5.

  4. Add pork to TM bowl with the paste and cook 3 min/100°C/Reverse/speed soft.

  5. Add eggplant and coconut milk. Cook 50 min/90°C/Reverse/speed soft.

  6. Add fish sauce and coconut sugar then cook for another 10 min/90°C/Reverse/speed soft.


Squeeze over some lime juice and serve with cauliflower rice or side dish of your choice.
