Prana Chai Granola

We have so many Chai recipes on here now, but working with Prana Chai recently was the perfect opportunity to investigate the 'real' original sticky chai.

As their website states; Chai is a deliciously sweet and spicy brew made with black tea, aromatic spices, and milk. Originally from India, this irresistible concoction has swept across the world to become a fierce rival of coffees and hot chocolates.

Chai is usually steeped in warm milk. In India, it’s traditionally buffalo milk. But of course in OZ, we usually brew it with cow's milk, and soy, almond, rice, and coconut milk make great alternatives too. A chai latte then, is just a chai really. (Latte means milk after all.)

The Prana Chai mix is sticky, fragrant and irresistable. We think you should chai it!

Place butter, honey, chai, salt and vanilla into Thermomix bowl and melt 4 min/60°C/speed 2. Remove from bowl and set aside.

Meanwhile, spread nuts and seeds onto large flat tray and toast in 200°C oven (no need to preheat) for about 10 minutes until crunchy. Set aside to cool slightly.

Spread oats onto tray and drizzle with butter mixture. Stir and mix by hand until evenly distributed. Reduce oven temperature to 160°C. Cook oats 20 minutes, stirring occasionally to ensure edges are not overdone.If not fragrant and crispy enough, cook a further 5–10 minutes. (This will depend on your oven.)

Place cooled nuts into Thermomix bowl and chop roughly 3 sec/speed 4. Place into large mixing bowl. Cool oats slightly before adding to the bowl.

Allow to cool completely before storing in an airtight container for up to 4 weeks...but it won’t last that long, I can assure you!

Try adding a handful of toasted pecans, choc chips, dried cherries, chopped dried apricots, goji berries, Brew Choc granules, other seeds or fruit of choice.
