Pulled Pork Cottage Pie

When you need comfort food there is nothing quite as comforting as digging into fragrantly hot mashed potato smothered in grilled cheese only to find a delicious pulled pork with veggie filling beneath. YUM. You can really add as many veggies as you want to this one, and casserole it all the way! Otherwise a side of steamed broccoli and peas on the side would be delish!

This recipe is using the Basic Pulled Pork recipe which you can make well in advance and either keep a portion in the fridge or freezer. Making this is as simple as making a great Mash and grating some cheese..and yep. Dinner is served!

Need

  • 500 Grams Basic Pulled Pork or more if you want to feed more people Recipe
  • 1 Kilo starchy potatoes, peeled and chopped into even large cubes
  • 2 small sweet potatoes, peeled and cut into small cubes
  • 1/2 butternut pumpkin, peeled and cut into small cubes
  • 2 carrots, peeled and cut into small cubes
  • 50 Grams butter melted BUY
  • 2 Pinches pink salt flakes BUY
  • black pepper
  • 100 Grams warm milk
  • 100 Grams grated cheese

Preheat oven to 180°C. Set aside a large baking dish or 2 smaller ones.

Place 1 litre of water into the Thermomix bowl with the Varoma dish and tray in place.

Place the cubed potatoes into the Varoma dish and the cubed sweet potato, carrot and pumpkin into the Varoma tray. Steam 20 min/Varoma/speed 4. Remove the tray of vegetables and continue cooking the potatoes a further 15 min/Varoma/speed 4..

Check the potatoes are fully cooked after 35 minutes. Let them dry out by emptying the Thermomix bowl and resting the Varoma dish on top for 10 minutes.

Place potatoes, melted butter, salt and pepper into the Thermomix bowl and mash with the help of the spatula 30 sec/speed 5. Pour in warm milk a little at a time through the hole in lid 30 sec/speed 5. You may not need all the milk. Insert Butterfly and whip 30 sec/speed 4.

Stir the sweet potato, carrot and pumpkin in to the pulled pork and tip out into the baking dish. Top with mashed potato and sprinkle with grated cheese.

Bake for 20 minutes or until cheese has browned and the meat is sizzling. Serve with steamed greens of choice.
