Raw Carrot Ginger Soup

Raw Soup?? Well yes, the raw foodists will love this one. I played around a fair bit with the flavour balance as eating blended raw veggies verges on smoothie-dom. We did end up warming it as well as cold soup on a cold day is a bit average. The theory behind raw food in winter is that you eat warming foods, thus, ginger and turmeric and chilli flakes. Raw food rules state that you can get the food to 48°C but no higher, so we went with 50°C as it did not quite reach temperature on the Thermomix dial. I think we nailed it. What do you think?

Of course if you are just trying to get more veggies in your diet, by all means, warm this up as high as 100°C...I am sure it will taste even better!

Place ginger and turmeric into the Thermomix bowl and chop 10 sec/speed 8. Scrape down sides of bowl.

Add remaining ingredients except spring onions and blend 3 min/speed 8 until thick and smooth. Add water until you feel happy with the consistency.

Warm 5 min/37ºC/speed 2 before serving with loads of spring onions on top. (Adjust seasoning to taste)
