Raw Chocolate Berry Coconut Mousse Pie

I have a couple of gorgeous daughters in law, and like the rest of Australia’s younger women, they are concerned about eating healthily...not that I haven’t seen them down a LOT of ice cream from my homemade stash on any given occasion. But I have to say...I was thinking I needed to help them along a tad and get their Valentines Day treats sorted. So here you go...and how pretty is it? I loved it. And just a note you should all be aware of, not a date in sight. (Not date night, an actual date...as in the fruit...) I do notice that most raw desserts take on the same flavour but in an effort to avoid this I didn’t use dates.

The texture is remarkable and if the weather is cold when you happen to make this you may need to melt the coconut oil before using. SO, enjoy, feel good about it and Happy Valentines Day. Treat yourself...

Place all crust ingredients into Thermomix bowl and blend 15 sec/speed 7. Scrape down sides of bowl and repeat.

Scrape down sides of bowl and repeat.

Press into heart shaped spring form tin or other tin of choice that has the base lined with baking paper. Place into the freezer.

Without cleaning the bowl, place all filling ingredients other than garnishes into Thermomix bowl and blend 20 sec/speed 8. Scrape down sides of bowl and repeat.

Spread the mixture onto crust and placeinto the fridge for a few hours to set solid. Decorate with fruit and coconut to taste. Serve in slices and keep refrigerated.
