It's not often we have left over cake, let alone left over red velvet cake. It is amazing after all, but we were doing another project, and suddenly had loads of left over cake that truly is too good to throw away, but it was all in off cuts, so not much use for anything. Light bulb moment...cake balls were born and I have to say as I am not much of a cake ball fan, these were too good and I may have eaten more of them than my fair share.
SO, even if you have to accidentally make a red velvet cake in order to try these, we think it will be totally worth it. (And they are kind of cute don't you think?) Tis the season!

- 300 Grams Red Velvet Cake off cuts, baked Recipe
- Approx 300 Grams Ermine Frosting or as needed Recipe
- 300 Grams chocolate white, dark or gold BUY
- freeze dried fruit, flowers or sprinkles to decorate
In a bowl, crumble cake with your hands. Add ermine frosting and mix together until you can create balls that stick together easily and will roll well.
Roll into walnut sized balls. Refrigerate or freeze.
Melt chocolate and coat cake balls. Decorate as desired with edible flowers/sprinkles, freeze dried fruit etc.
