Rhubarb bit
- 3 - 4 stalks of rhubarb
- 1 orange, juice only
- 1 Teaspoon ground cinnamon
- 1 Teaspoon vanilla bean paste BUY

Crumble of choice
- 1 Batch Brown Sugar Crumble Recipe
- 1 Batch Pecan Coconut Shortbread Crumble Recipe

Preheat oven to 180°C and line a baking dish with paper.

Dice the rhubarb and toss with remaining ingredients.
- 3
Roast for 30-40 minutes until sticky and fragrant.
- 4
Top with crumble of choice and bake for a further 20 minutes.

Serve with ice cream, custard or whipped cream, or even all of the above!
