Tenina.com's Roasted Broccoli Salad

Do

  1. Turn the oven to 200°C and line an oven tray with baking paper.

  2. Wash and chop the broccoli florets into relatively small pieces. Bigger is not better! Arrange on the prepared tray.

  3. Add the dried herbs on top, salt and pepper, then drizzle it all with EVOO coating well.

  4. Roast for 10 minutes. Remove from the oven and add pine nuts. Return to the oven for a further 5 minutes. If you are doubling this recipe, cooking time for the broccoli will increase, but not for the pine nuts.

  5. Cool the broccoli on tray while you prepare the dressing.

  6. Place all the ingredients into the Thermomix bowl and blend 8 sec/speed 6. Taste and adjust seasoning if needed.

  7. Place broccoli mixture into a serving bowl with raisins and feta. Drizzle with dressing, toss gently and serve!
