Steamed Chicken Salad With Herbed Avocado Mayo

I am a little late in delivering this promised recipe…you see I thought I was just a little unwell. Turned out I was extremely unwell and after a quick fix it trip to hospital where they pumped me full of saline, I am practically as good as new…I did say practically…lets not get carried away. I have been laying around for nearly a week now, and it is driving me quietly mad. What did make my day today though, was the fact that in Adelaide at least, For Foods Sake is number 7 on the Dymocks best seller list! YAY...

A word to the wise, if you were hoping to snag a copy or two of this book for Christmas, I would be doing it NOW. Seriously, they are selling like crazy and print shipments are not that reliable in my experience, as limited as it is.

Anyhoo, to the recipe at hand. This goes with the Herbed Avo Mayo of recent times. I started this idea for my Christmas classes, which at this stage, are looking very limited…those too, you will have to buy quickly. I am sooo busy, life is getting the way of my life! (if you know what I mean!)

Place water into Thermomix bowl and bring to the boil 8 min/Varoma/speed 3.

Meanwhile place chicken into Varoma dish and prawns into Varoma tray.

Steam 10 min/Varoma/speed 3. Check chicken and prawns are cooked. Add further time as needed. (This will vary based on how big your prawns are and how much chicken you use.)

Place salad greens on a large serving platter.

5  

Toss all remaining ingredients together with enough Herbed Avocado Mayonnaise to coat ingredients in large bowl.

6  

Arrange on top of salad greens and garnish with herbs.

7  

You will not need all the mayonnaise, so store in refrigerator and use as any other mayonnaise as needed.
