Steamed Figgy Puddings

No Christmas feast is complete without a Figgy pudding and this one is gluten free, healthier than most, but just as decadent as you might expect!

Bearing in mind that traditional steamed puddings are steamed for around 6-8 hours, the shorter steaming time on these is a bonus, however, don't be afraid to keep steaming them if you like a cakier lighter texture to your pud. Very English, but very delish. Make them more Aussie by serving with lashings of Killer Vanilla Ice Cream or to be all traditional, go with Brandy Cream Sauce or even Christmas Brandy Butter. Whichever way you have them, enjoy and ho ho ho!

Place dried fruits, zests, brandy, cocoa, spices and juices into the Thermomix bowl and chop 5 sec/speed 8.

Cook 10 min/100°C/speed 2.

Remove from bowl and allow to marinate for several hours or days, covered.

Place quinoa into the Thermomix bowl and mill 10 sec/speed 10.

Add sugar and almonds and cornflour to the Thermomix bowl and mill 10 sec/speed 10. Add butter and blend 6 sec/speed 8.

Add eggs and vanilla bean paste and blend 5 sec/speed 5. Scrape down sides of bowl as needed.

Add fruit mixture and blend 10 sec/speed 8 or until well combined. Finish combining by hand.

Divide mixture between 10-12 mini ramekins or pudding moulds and place in Varoma dish and tray. Rinse the Thermomix bowl and add water.

Set Varoma into position and steam 60 min/Varoma/speed 3. Check water level and steam further 30 min/Varoma/speed 3.

Cool slightly before serving with custard, cream, ice cream, a dollop of strawberry jam or fruit garnish of choice. The puddings are quite dense and moist. You cannot overcook them, so if you prefer a more cakey mixture, steam an additional 30 minutes.
