Need

1 orange, zest finely grated
A few coloured peppercorns
1/2 tonka bean
1/2 fresh nutmeg
1/2 vanilla bean
1 Teaspoon ground ginger
1 Teaspoon cardamom pods
15 Gram candied ginger (optional)
1/2 cinnamon stick(s)
150 Gram dark muscovado or dark brown sugar

Do

Place all ingredients except sugar into Thermomix bowl and mill 5 sec/speed 9.
Add sugar and blend 10 sec/speed 10.
Package in cellophane bags and tie with ribbon as a gift. Attach a copy of a recipe to use it in or use in recipe as needed.
