Sweet Potato Dinner Rolls

When it comes to using fresh yeast versus dry yeast I will choose fresh every time. I know it is not that easy to source, but if you ever can find it, it is totally worth giving it a go. The end results are fluffier, more fragrant and magical than the dry yeast counterparts. I used to try and use fresh yeast pre Thermomix days and had quite a few fails. Since Thermomix, never a fail. So go and find some fresh yeast and give it a go. These rolls are the perfect place to begin!

Prepare the sweet potato and place into the Varoma dish. Add steaming water to Thermomix bowl and set Varoma into position.

Steam sweet potatoes 25 min/Varoma/speed 3.

Drain Thermomix bowl and set potatoes aside to cool completely before proceeding.

Place yeast, remaining water and coconut sugar into the Thermomix bowl and warm 2 min/37°C/speed 1.

Add cooked sweet potatoes, butter and eggs and blend 10 sec/speed 5.

Add salt and flour and mix 6 sec/speed 6.

Knead 3 min/Interval Remove from bowl and bring together by hand on a floured bread mat.

Wrap and prove until doubled.

9  

Divide dough into rolls and place onto a baking tray, not touching.

10  

Cover and allow to rise again until rolls are just touching while you preheat the oven to 180°C.

Bake 18 minutes until golden and then brush with melted butter immediately on removing from the oven.
