Tenina.com's Sweet Potato Mash

Need

800 Gram sweet potato, peeled and cubed
500 Gram water
Pinch pink salt flakes
40 Gram butter
40 Gram sour cream plus extra to serve
pink salt flakes and pepper to taste
a few snipped chives for garnish (optional)

Do

Place sweet potato, water and salt into the Thermomix bowl. Cook 18 min/Varoma/reverse/speed 1.
Drain the water. Insert Butterfly. Add remaining ingredients and whip 20 sec/Butterfly/speed 3.
Serve with a dollop of sour cream and snipped chives with any dishes of your choice!
